Herb Marinated Chicken

 4 chicken breasts
 1 cup mixed herbs (mint, parsley, basil, rosemary, thyme, etc.)
 1 lemon
 1 onion
 1 tbsp dijon mustard
 2 tbsp olive oil
 salt & pepper to taste

Squeeze all the juice out of the lemon, roughly chop onion, then add all ingredients apart from the chicken to a bowl and blitz with a hand blender.

Dice chicken into medium sized pieces and place them in a bowl. Pour the blended marinade over the chicken and mix well. Cover the dish with clingfilm and leave it to marinade in the fridge for at least 4 hours.

Place 12 wooden skewers into a tray of cold water to soak and heat up the grill. Divide and thread the chicken between your skewers – don’t push them too close together otherwise they won’t cook properly, then place onto a tray or a plate ready for grilling.

Place skewers on a hot grill and cook for 10-15 Minutes, or until cooked through, turning every 2 Minutes to get nice and golden on all sides. Serve with fresh salad or roasted vegetables.
