Spicy Black Bean Tacos

 600 g cooked black beans
 200 g chopped tomatoes
 1 garlic clove (finely chopped)
 1 celery stalk (finely chopped)
 ½ red onion (finely chopped)
 1 small chilli (finely chopped)
 1 pinch paprika
 1 pinch cinnamon
 1 pinch oregano
 1 pinch cumin
 2 tbsp olive oil
 6 taco shells
 ½ cup fresh coriander for garnish
 1 lime zest
 your favourite toppings to serve (mozarella, salsa, guacamole, sour cream, etc)

In a heavy bottom saucepan heat olive oil, add onion, celery and sauté for 2 Minutes or until soft.

Add garlic, chilli, all of the spices and sauté for further 2 Minutes on a medium/low heat until fragrant.

Finally, add the beans, chopped tomatoes, cover and simmer on low heat for 30 Minutes stirring occasionally.

Pre-heat oven to 180°C/350°F. Meanwhile, fill the bean stew in taco shells and top with cheese, if using. Place tacos on a baking tray and bake in the oven for 5-8 Minutes or until cheese has melted and taco shells are crunchy.

Just before serving garnishing with lime zest, fresh coriander and enjoy with your favourite toppings.
