 250 g halloumi
 1 bell pepper
 1 courgette
 150 g cherry tomatoes
 1 cup mint leaves
 1 lemon
 3 tbsp olive oil
 salt & pepper to taste

Roughly chop vegetables and tip them into a bowl. Add chopped mint, olive oil, lemon juice and pepper.

Dice Halloumi into medium sized squares and thread onto wooden skewers alternating with seasoned vegetables. Place on the grill and cook 3 Minutes from each side.
