Chocolate & Raspberry Chia Parfait

 50 g chia seeds
 200 ml coconut milk
 300 g raspberries (fresh or frozen)
 1 tsp vanilla bean paste
 1 tbsp organic cocoa powder
 250 g plant based Greek yogurt
 4 tbsp cacao nibs

Prepare chia seed pudding in advance by mixing seeds with coconut milk and leaving in the fridge overnight to set.

Add cocoa and vanilla to the chia pudding, mix until combined and set aside. In a small bowl mash raspberries.

In a dessert bowl or glass arrange parfait by adding cocoa chia pudding, mashed raspberries, cacao nibs and yogurt in neat layers.
Sprinkle with some more cacao nibs and serve.
