Place beef, shallots, garlic, parsley and mustard in a large bowl, mix well to combine. Season to taste and make four patties.
Heat olive oil in a frying pan over medium heat and cook burgers for 4 Minutes from each side or until browned and thoroughly cooked.
Transfer to a heated plate to rest and toast burger buns in the same pan for 1-2 Minutes until browned.
Meanwhile, in a small bowl mix greek yogurt with chopped parsley and season to taste.
Spread the base of the burger with herb yogurt, top with mixed salad, burger patties, cheese, radishes, avocado and bun tops. Serve on its own or with your favourite side dishes.
