Add flour, salt & sugar to a clean bowl and mix with a whisk to break any clumps. In a small bowl or glass mix dried yeast with little water and stir well until it dissolves.
Add eggs, milk, olive oil and yeast mixture to the dry ingredients and mix until well combined and dough begins to pull away from the sides of the bowl and just begins to form a ball.
Knead dough a couple of minutes until smooth, cover the bowl with a clean kitchen towel and let stand until doubled in size, about 40-60 Minutes.
Meanwhile, fry onions on a medium heat until soft, then add bacon and fry until lightly golden. Season to taste with salt & pepper.
Pre-heat oven to 180°C/350°F/gas 4. Whisk an egg. You will need this to brush pasties before baking.
Once the dough is ready, place it onto a lightly floured work surface and roll out using a rolling pin until the pastry is around 5mm (1/8 inch) thin.
At this stage you can use your imagination – you can cut rounds using a wide glass. Place a teaspoon of bacon in the centre of each round and brush a little of the egg on one edge. Lift the opposite edge of the pastry over the filling to seal the pasty. Repeat until you have made desired amount of pasties.
Place all pasties on a baking tray and brush each pasty with egg to glaze. Bake for 10-15 Minutes or until golden brown.
