Raspberry & Coconut Chia Parfait

 50 g chia seeds
 200 ml coconut milk
 1 tsp vanilla bean extract
 80 g coconut cream
 150 g raspberries
 1 tbsp agave nectar
 100 ml plant based greek yogurt

Prepare chia seed pudding in advance by mixing seeds with coconut milk, vanilla bean paste and leaving in the fridge overnight to set.

Tip coconut cream, raspberries and agave nectar into the blender and blitz until smooth.

In a dessert bowl or glass arrange parfait by adding chia pudding, yogurt and raspberry/coconut cream in neat layers. Add some raspberries on top to decorate and serve.
